Healthy Homemade Hummus

There are so many ways to make hummus healthy and exciting at home, versus buying caloric pre-made products that may contain preservatives or other unwanted ingredients. I’m always experimenting with different ingredients, and my latest is… could you guess? Sauerkraut! It adds a bit of tang and salty taste, plus probiotics for gut health.

Combine in a blender:

2 cans garbanzo beans (organic, BPA-free lining if you can find it)

Liquid from 1 can of the beans

1/4 cup sauerkraut, plus a little juice

1-3 garlic cloves, to taste

2-3 tablespoons tahini, to taste

Juice of one lemon

Pepper and salt, to taste

As you blend, you may need to stop the blender and scrape the sides and pulse the blender. Add more of the reserved garbanzo bean liquid or sauerkraut liquid if to chunky.

Enjoy with raw veggies or seeded whole grain crackers.
