Go To Meal of The Week: Tacos

I’ve found the best way to satisfy everyone’s diet and taste preferences in my family is to prep ingredients for tacos, and have everyone assemble it themselves. When my dad comes to visit, he calls it a “fun meal!”

Ingredients:

  • Any leftover cooked meat you have, or tofu: heat in a pan on medium with homemade taco seasoning

  • Any chopped raw vegetables: spinach, cherry tomatoes, onions, bell peppers (can also be sauteed if you prefer them warm)

  • Grain: cooked quinoa or wild rice

  • Sauce: salsa or taco sauce made without sugar

  • Garnishes: avacado, cilantro

  • Assembly options: Stuff ingredients in a toasted organic gluten free corn taco shell or soft taco, wrap in a tortilla or large green chard leaf, or toss all ingredients over a bed of greens and top with salsa. Enjoy!
