Banana Almond Breakfast Bars

Don’t throw away your old bananas! Make these simple Banana Almond Breakfast Bars.

Ingredients:

3 very ripe bananas

1 Tbsp coconut oil

1 1/3 cups ground oats

½ cup roughly chopped almonds

1 Tbsp vanilla

In a large bowl, mash bananas and coconut oil together with a fork. Mix in ground oats (or oat flour) and almost all of the almonds, reserving some for the last step. Spread mixture into a non stick spring form pan or silicone baking form, and top with the last of the almonds. Bake for 30-40 minutes at 350 degrees. Cool completely before cutting, and store in the fridge.
